We have even streamlined the ordering process to make online ordering even easier, and we are not done yet. There is a range of upgrades we are still working on to make your ordering process as easy as posible.

Food Safety at Christmas

It's that time of year again and the party season is in full swing, so here are some Food Safety Hints so you and your guests enjoy the festive season.

• Avoid keeping food in the temperature danger zone between 5^oC and 60^oC where food poisoning bacteria grow best.
• Keep hot foods steaming hot over 60^oC and keep cold foods refrigerated at or below 5 ^oC.
• Ready to eat food should always be defrosted in the fridge or microwave, never on the bench top, unless the manufacturer recommends that you do so.
• You can defrost the turkey in the fridge, or ask your butcher to defrost it in the cool room but make sure it is completely defrosted in the centre before cooking. It’s OK to defrost a turkey on the benchtop, but you must make sure it is thoroughly cooked all the way through to make sure any bacteria are killed – use a meat thermometer to check that the temperature in the thickest part reaches 75 degrees Celsius.
• Because stuffing slows down cooking and cooling, it is best cooked separately.
• Before preparing food for Christmas make sure that there is enough room in the fridge to keep cold food at or less than 5^oC.
• If there is not enough room in the fridge, remember that soft drinks and alcohol,, jams, pickles and other acidic condiments do not require refrigeration to remain safe. Drinks can be kept cold in an esky with ice.
• Prepare foods as close as possible to eating time.
• Use separate cutting boards and utensils for raw meats and poultry and ready to eat foods.
• Cook foods properly. All rolled & stuffed roasts, poultry, sausages, mince dishes and liver need to be fully cooked. Steaks, chops and solid pieces of meat can be eaten rare.
• If you cook large amounts of food in advance, divide it into smaller portions or shallow containers, cover and place in fridge or freezer. Make sure there is good air circulation around the containers.
• Refrigerate leftovers immediately after the meal.
• Always store perishable leftovers in the fridge and use them up within 2 to 3 days.
• When reheating food ensure that it is steaming hot all the way through (at least 75^oC).
• Your Christmas ham will keep several weeks with proper handling by removing it from its plastic wrap, covering with clean cloth soaked in water and vinegar so it doesn’t dry out, following any instructions on the packaging and storing it in the fridge below 5 degrees Celsius. Reduced salt hams are now becoming popular but will not last as long as conventional hams so follow instructions on the packaging.
• Before preparing foods and between handling raw meat or raw chicken wash hands thoroughly with soap and warm water and dry thoroughly.

Cosmic Cocktails have recently been approved as an Appointed Bridal Industry Associate by the Australian Bridal Industry Academy.

The Australian Bridal Industry Academy was founded in 1997 as a National Industry Authority designed to distinguish quality wedding suppliers as determined by brides. Since then ABIA have assisted over 70,000 brides to select the best suppliers from over 30,000 wedding suppliers who have been ranked, rated and evaluated by past brides. The ABIA Accreditation program is open to all wedding suppliers who demonstrate a high standard of quality and service.

Appointed Bridal Industry Associate Accreditation Level 1
This title is provided to suppliers who achieve ABIA’s standards in their first year as a member of the Academy.

ABIA gathers feedback from brides about suppliers – referred to as the ‘Bridal Rating’ – and uses this as the basis of the ABIA Accreditation Program.

As you can see in the table below Cosmic Cocktails has a 'Bridal Rating' of 94.29%.

What is a Gold License Caterer?

The Caterers Gold License has established minimum standards for caterers in the areas of hygiene in food preparation, the quality of cooking personnel and management, the existence of appropriate Workers Compensation and Product & Public Liability insurance. All of these are potential problem areas for unsuspecting customers of 'fly-by-night' businesses, and ensure that consumers are supplied with a quality product.

Many people only use a caterer on average three times in their life, for a wedding, an anniversary or a special birthday, and one incident of food poisoning can spoil what should be a memorable occasion. Unfortunately, many people don’t know what to look for when selecting a caterer.

A Gold License Caterer Must Have The Following

1) Commercial Kitchen A legal requirement for preparation, adequate refrigeration for food storage, appropriate facilities for transportation of food and the handling of food on sale.

2) Up-to-date and Relevant Insurances The caterer must provide protection of consumers by taking out public & product liability and worker compensation insurances.

3) Training and/or experience Gold Licence Caterers must have or employ a senior person who have five years experience within the hospitality industry, in food preparation or catering management, along with relevant qualifications, a Safe Food Handling Certificate and Responsible Service of Alcohol Certificate.

4) Foodsafe (WA only) Food Handler Training Programme where all staff have at least basic food handler training; and FoodSafe practices are maintained to the satisfaction of the Environmental Health Officer.

The Accreditation Process An independent Accreditation Board has been established in each state to undertake the approval of Gold License Caterers. The Board consists of representatives from governing industry bodies and State Accreditation Sub-Committee.

When choosing your caterer, make sure you ask if they hold a Gold License.
