    Planning A Halloween Party? Here are some tips.


    Unlike weddings, Christmas parties and other events, Halloween parties are anything but serious. The best way to plan for Halloween party catering is to have a little fun while you do it. Here are some tips you can use to make your Halloween a spooky good time and an unforgettable occasion:

    Consider the guests. At a Halloween party, what you serve and how you serve it has a lot to do with the guests. For example, if you are catering a kids’ Halloween party, scary food and a spooky buffet presentation will take you far. However, if you are catering a late-night Halloween party for adults, the cocktails will probably become a more important focus.

    Dress up your staff. If you will be offering full-service catering for Halloween party and it will be a costume party, make sure the staff dresses up so that they match the occasion.

    Decorate at the event. Use Halloween Party Suppies, jack-o-lantern lighting, fake spider webs, bats hanging from ceilings, flying ghosts and black fishnetting and tulle around the banquette table to decorate the party area.

    Create an atmosphere. In addition to decorating with fake spider webs and other spooky items, also consider investing in or renting a fog machine and providing sound effects and special lighting, like black lights, to create a Halloween mood. Your commitment to creating the right vibe will definitely impress your guests.

    Serve “scary” and festive food. Festive Halloween snacks are part of the fun! You can make the food and beverages spooky (and gross!) or deliciously develish. It’s really up to the style of the party.

    Name the menu items. Use card holders to display the creepy names of your food and drinks. This will go a long way toward carrying the Halloween theme through to the food service. For example, naming spaghetti “Worms and Blood” turns a common food item into a spooky dish.

    Serve Halloween-themed drinks. Serve drinks that are Halloween-themed or in Halloween colors. Slushy Machines are a cost effective way to add colourful themed drinks to your beverage choices. Other options would includes orange or green punch, Bloody Marys, apple cider, “Black and Oranges” instead of black and tans, and any other creative drinks you can come up with. You may also want to add dry ice to the punch bowl or to a big black kettle to create a “witch’s cauldron” presentation for your beverages.

    Provide bartending. Many adults will want a bartender at their Halloween party. Offer flair bartending services for a reasonable fee. If your bartender can dress up like a ghost, vampire or devil, his or her flair bartending might be even more appreciated. If possible, use a portable bar or the client’s existing home bar area to serve the guests.

    Offer extra services. There are a variety of special services you can offer at Halloween that may not be needed on other occasions. This can include fortune telling, a DJ that plays spooky music as well as dance hits, face painting, professional pumpkin carving, complimentary rides home for intoxicated guests and other services that might create additional experiences for you guests.

    Do not forget flavour. One of the most common mistakes seen at a Halloween Party is that the food and drinks are more gimmicky than they are appetizing. Remember, serving spooky-looking food only works if the food still tastes good. Make sure that the flavour of your food and drinks remains a high priority, maybe use a professional caterer.

    Cosmic Cocktails & Catering Win ABIA Independant Catering Award


    The Annual Bridal Industry Awards (The ABIA’s) are determined by the only entity qualified to evaluate a wedding business
    - The Past Bride & Groom.

    The purpose of the ABIA Awards

    Each year, ABIA administer a series of State Awards which enables progressive, prolific and proficient wedding businesses to be publicly recognised for their efforts in designing and delivering the brides dream of the perfect day.

    Determining the Finalists & Winners of the ABIA

    The process of determining who are the best wedding businesses in each State is facilitated via a sophisticated online ratings system which requests past brides & grooms to evaluate each of their wedding businesses from a maximum of 100 points based on
    ABIA’s four (4) Pillars of Perfection:

    Quality of Product | Quality of Service | Value for Money | Attitude of Staff
    Each bride provides a rating out of 100 points in each of the above criterions.
    The ratings  provided by each bride/groom are accumulated to determine the overall performance of each vendor in each of 36 different wedding categories. Two additional criterions are then added to the overall brides rating, being a weighted index for the number of
    brides/grooms who have rated each business and a weighted index for the number of times each individual business has been selected by the brides/grooms as the most outstanding business of all the businesses who provided a product or service for their wedding.

    The system of collecting bridal feedback is of the utmost importance to ABIA as it forms the foundation for the ABIA Accreditation and Awards system. This system has been set in place to ensure high quality service amongst bridal suppliers and allows the bride to easily determine who the quality businesses are through the ABIA Accreditation logos.

    All ABIA Members must attain an A Rate (average rating) equal to or above 95.00%.
    The A Rate is an average of all ratings provided by a business’ past brides in the most recent award year.

    Wedding Caterer 2014 - Finalist - Independently Judged at a Wedding held in January, the Winner was Mosmans Restaurant, congratulations to them.

    Small Caterer 2014 - Finalist - Independently Judged at a Corporate Christmas Function - Cocktails, Canapes and Walk & Fork menu. Congratulations to Creative Catering on their win.

    Employer of the Year 2014 - Winner - Nominated by our staff, this is awarded to an outstanding employer in the industry whose attitude and contribution to his or her profession has inspired public and colleagues confidence in the industry. 

    Product Supplier - Finalist - This was awarded to a product supplier whose contribution and service through his or her business has resulted in outstanding service to the industry. We entered as we have been suppling Slushy Machines to the industry for over 10 Years and Chocolate Fountains for over 5 years. The winner was Jean Pierre Sancho.

    Employee of the Year 2014 - Finalist - We nominated Catherine as this award was for employees who have made an outstanding contribution to his or her profession, Catherine continually goes above and beyond her role. The winner was Arnya from Frasers Restaurant, we deal with Arnya and agree she is a worthy winner.

    Owners Clint & Tanya take up Challenge for Charity


    Cosmic Cocktails & Catering owners Clint Gurney & Tanya Gurney are taking on Australia's Premier Body Transformation Challenge and they are doing it for charity.

    The 12 week challenge will test them both mentally and physically, they will be competing with thousands of other entries from across the country.

    The goal is to make the top 50, but if history is anything to go by, just finishing the 12 weeks will be a victory. 

    Clint will be doing Max's Muscle Up Challenge and Tanya will be doing Maxine's Tone Up Challenge. Both programs have a strict meal and exercise plan to follow to achieve the best results.

    We are seeking your help to raise funds for the Heart Foundation, we have set ourselves a goal of raising $12,000. Through your support, even if it's only a dollar we believe we can get there before the challenge finishes on the 22nd of October 2014.

    Food Safety at Christmas

    It's that time of year again and the party season is in full swing, so here are some Food Safety Hints so you and your guests enjoy the festive season.

    • Avoid keeping food in the temperature danger zone between 5oC and 60oC where food poisoning bacteria grow best.
    • Keep hot foods steaming hot over 60oC and keep cold foods refrigerated at or below 5 oC.
    • Ready to eat food should always be defrosted in the fridge or microwave, never on the bench top, unless the manufacturer recommends that you do so.
    • You can defrost the turkey in the fridge, or ask your butcher to defrost it in the cool room but make sure it is completely defrosted in the centre before cooking. It’s OK to defrost a turkey on the benchtop, but you must make sure it is thoroughly cooked all the way through to make sure any bacteria are killed – use a meat thermometer to check that the temperature in the thickest part reaches 75 degrees Celsius.
    • Because stuffing slows down cooking and cooling, it is best cooked separately.
    • Before preparing food for Christmas make sure that there is enough room in the fridge to keep cold food at or less than 5oC.
    • If there is not enough room in the fridge, remember that soft drinks and alcohol,, jams, pickles and other acidic condiments do not require refrigeration to remain safe. Drinks can be kept cold in an esky with ice.
    • Prepare foods as close as possible to eating time.
    • Use separate cutting boards and utensils for raw meats and poultry and ready to eat foods.
    • Cook foods properly. All rolled & stuffed roasts, poultry, sausages, mince dishes and liver need to be fully cooked. Steaks, chops and solid pieces of meat can be eaten rare.
    • If you cook large amounts of food in advance, divide it into smaller portions or shallow containers, cover and place in fridge or freezer. Make sure there is good air circulation around the containers.
    • Refrigerate leftovers immediately after the meal.
    • Always store perishable leftovers in the fridge and use them up within 2 to 3 days.
    • When reheating food ensure that it is steaming hot all the way through (at least 75oC).
    • Your Christmas ham will keep several weeks with proper handling by removing it from its plastic wrap, covering with clean cloth soaked in water and vinegar so it doesn’t dry out, following any instructions on the packaging and storing it in the fridge below 5 degrees Celsius. Reduced salt hams are now becoming popular but will not last as long as conventional hams so follow instructions on the packaging.
    • Before preparing foods and between handling raw meat or raw chicken wash hands thoroughly with soap and warm water and dry thoroughly.

    Cosmic Cocktails is an Appointed Bridal Industry Associate

    Cosmic Cocktails have recently been approved as an Appointed Bridal Industry Associate by the Australian Bridal Industry Academy.


    abia.jpgThe Australian Bridal Industry Academy was founded in 1997 as a National Industry Authority designed to distinguish quality wedding suppliers as determined by brides. Since then ABIA have assisted over 70,000 brides to select the best suppliers from over 30,000 wedding suppliers who have been ranked, rated and evaluated by past brides. The ABIA Accreditation program is open to all wedding suppliers who demonstrate a high standard of quality and service.

    This title is provided to suppliers who achieve ABIA’s standards in their first year as a member of the Academy.




    ABIA gathers feedback from brides about suppliers – referred to as the ‘Bridal Rating’ – and uses this as the basis of the ABIA Accreditation Program.

    As you can see in the table below Cosmic Cocktails has a 'Bridal Rating' of 94.29%.

    Cosmic Cocktails Win at Belmont Business Awards Night

    What is a Gold License Caterer?

    The Caterers Gold License has established minimum standards for caterers in the areas of hygiene in food preparation, the quality of cooking personnel and management, the existence of appropriate Workers Compensation and Product & Public Liability insurance. All of these are potential problem areas for unsuspecting customers of 'fly-by-night' businesses, and ensure that consumers are supplied with a quality product.

    Many people only use a caterer on average three times in their life, for a wedding, an anniversary or a special birthday, and one incident of food poisoning can spoil what should be a memorable occasion. Unfortunately, many people don’t know what to look for when selecting a caterer.

    A Gold License Caterer Must Have The Following

    1) Commercial Kitchen A legal requirement for preparation, adequate refrigeration for food storage, appropriate facilities for transportation of food and the handling of food on sale.

    2) Up-to-date and Relevant Insurances The caterer must provide protection of consumers by taking out public & product liability and worker compensation insurances.

    3) Training and/or experience Gold Licence Caterers must have or employ a senior person who have five years experience within the hospitality industry, in food preparation or catering management, along with relevant qualifications, a Safe Food Handling Certificate and Responsible Service of Alcohol Certificate.

    4) Foodsafe (WA only) Food Handler Training Programme where all staff have at least basic food handler training; and FoodSafe practices are maintained to the satisfaction of the Environmental Health Officer.

    The Accreditation Process An independent Accreditation Board has been established in each state to undertake the approval of Gold License Caterers. The Board consists of representatives from governing industry bodies and State Accreditation Sub-Committee.

    When choosing your caterer, make sure you ask if they hold a Gold License.
